Cobb Salad

Prep Time 10 minutes;  Total Time 10 minutes (15 if cooking bacon); Serves 2

This American classic was created in the 1920’s and exists in hundreds of variations. Here is a quick version but you can create your own variety using your favourite vegetables.

1 torn cos lettuce leaves
150g/5oz cooked chicken or turkey breast
1 apple cored and sliced
½ avocado sliced
1 tomato cut in 8 wedges
2 slices of cooked back bacon chopped (optional)
2 tsp grated reduced fat cheddar cheese or crumbled blue cheese

Dressing for two

2 tbsp no/low fat yoghurt or mayonnaise
2 tbsp apple juice
1 tbsp balsamic vinegar
1 ½ tsp olive oil
¼ tsp sugar substitute
Pinch salt and fresh ground pepper

  1. Toss lettuce with apple and avocado and assemble on two plates. Place tomato wedges around sides. Top with cooked chicken and cooked bacon if using. Sprinkle with blue cheese.
  2. Prepare dressing by mixing all ingredients in a small jar with lid. Shake well. Serve on side and use for dipping. Alternately you can toss dressing with lettuce combination.
